Genesis 31:10

And it came to pass at the time that the cattle [flocks] conceived, that I lifted up mine eyes, and saw in a dream, and, behold, the rams which leaped upon the cattle [were] ringstraked [streaked], speckled, and grisled [gray-spotted].

Geneva Bible -For in ramming time I lifted up mine eyes and saw in a dream, and behold, the he goats leaped upon the she goats, that were party colored with little and great spots spotted.

Genesis 31:9

Thus God hath taken away the cattle of your father, and given [them] to me.

Geneva Bible - Thus hath (c) God taken away your father’s (*) substance, and given it me.
(c) This declareth that the thing, which Jacob did before, was by God's commandment, and not through deceit.
(*) Or, cattle.

Genesis 31:8

If he said thus, The speckled shall be thy wages; then all the cattle[flocks] bare speckled: and if he said thus, The ringstraked [streaked] shall be thy hire; then bare all the cattle ringstraked.

Geneva Bible - If he thus said, The spotted shall be thy wages, then all the sheep bare spotted; and if he said thus, The party colored shall be thy reward, then bare all the sheep party colored.

Genesis 7:23

And every living substance was destroyed which was upon the face of the ground, both man, and cattle, and the creeping things, and the fowl of the heaven; and they were destroyed from the earth: and Noah only remained [alive,] and they that [were] with him in the ark.

Genesis 7:21

And all flesh died that moved upon the earth, both of fowl, and of cattle, and of beast, and of every creeping thing that creepeth upon the earth, [the land] and every man:

Genesis 7:14

They, and every beast after his kind, and all the cattle after their kind, and every creeping thing that creepeth upon the earth after his kind, and every fowl after his kind, every bird of every sort.

Note again that it is every beast "after his kind", not every single sub-species.  For instance, the horse would be representative of the Donkey, Mule, etc.

Genesis 6:20

Of fowls after their kind, and of cattle [animals] after their kind, of every creeping thing of the earth after his kind, two of every [sort] shall come unto thee, to keep [them] alive.

Note:  The word "kind" is used when talking about the different species.  It does indicate that there could be variations of each "kind", and only one of each was taken.  For instance, there are horses, mules, donkeys, zebra's, but one of the "kind" of horse was taken.
